Ingredients
¾ cup (60g) quick oats
1 ¼ cups water (or preferred milk)
1 scoop Ascent Strawberry Protein Powder
2 tbsp. Peanut flour (peanut butter powder)**
2 egg whites (92g liquid egg whites)
2 tbsp. Sugar free maple syrup (or preferred sweetener)*
¼ tsp. Salt
½ tsp. Cinnamon
½ cup strawberries, fresh or frozen
NOTES
*The protein powder adds a little bit of sweetness, so you can omit the syrup. Honey, agave, or regular syrup can be substituted as well.
**Peanut flour is defatted peanuts. It has the same flavor as peanut butter, but without the extra fat and calories.
INSTRUCTIONS
Add oats and milk/water to a large microwave safe bowl. Microwave on high for 2:00. Stir, and microwave for another 1:30.
Add egg whites and whisk them into the oatmeal. Make sure to mix really well so they are incorporated and you don’t end up with scrambled eggs in your oats.
Microwave for 60 seconds. Stir vigorously, and then microwave for another 45 seconds.
Once cooked, add protein powder, peanut flour, strawberries, maple syrup (or preferred sweetener) salt and cinnamon. Mix until smooth.
Top with more strawberries, peanut butter, and any preferred toppings. Enjoy!
