Double Chocolate Fudge Casein Protein Brownies

Ingredients: Double Chocolate Fudge Casein Protein Brownies

  • 1 can black beans, drained and rinsed well
  • ½ cup + 2 tbsp. unsweetened cocoa powder
  • 3/4 cup white/whole wheat flour (oat flour or gluten free)
  • 2 scoops Ascent Chocolate Micellar Casein Protein
  • ½ cup Vanilla Greek yogurt
  • 3 whole eggs
  • 1/2 cup coconut oil, melted
  • 1/2 cup + 2 tbsp. honey
  • 1/4 cup milk ( I used unsweetened almond)
  • 2-4 tbsp. coconut sugar (depending on how sweet you like it)
  • 1/4 cup semi-sweet chocolate chips, melted
  • 1 tsp. baking powder
  • ½ tsp. salt

Instructions: Double Chocolate Fudge Casein Protein Brownies

  • Add black beans, Greek yogurt, eggs, melted coconut oil, honey, milk, coconut sugar, and melted chocolate to food processor.
  • Blend until completely smooth.
  • Next add the dry ingredients: cocoa powder, flour, protein powder, baking powder and salt.
  • Blend/process again until smooth.
  • Add chocolate chips and pulse a few times to incorporate.
  • Line a 9x9 glass baking dish with foil.
  • Spray with nonstick baking spray.
  • Pour batter into baking dish and spread evenly into the dish.
  • Sprinkle with some chocolate chips on top if desired.
  • Bake at 350F for 20-25 minutes.
Be careful not to over-bake!
