½ cup (60g) all-purpose flour
1 scoop (31g) Ascent Chocolate Micellar Casein
⅓ cup (40g) unsweetened cocoa powder
¼ tsp salt
¼ tsp baking powder
½ tsp. Vanilla extract
2 whole eggs
⅔ cup (150g) plain, nonfat Greek yogurt
½ cup (120mL) unsweetened almond milk
⅓ cup granular sweetener of choice (any sweetener that measures 1:1 with sugar)
2 tbsp. (30g) semi-sweet chocolate chips, melted
3 tbsp (45g) melted white chocolate chips
½ cup (120g) plain, nonfat Greek yogurt
¼ tsp mint extract
3-4 drops green food coloring
Preheat the oven to 350F. Add flour, protein powder, cocoa powder, salt, and baking powder to a large bowl. Mix. Add wet ingredients (vanilla extract, eggs, Greek yogurt, milk, and melted chocolate chips) to the dry ingredients. Mix until a smooth batter forms.
Spray a 5x9 glass baking dish with nonstick spray. Pour batter into the dish and bake at 350F for 15-18 minutes or until a knife comes out clean. The center will be slightly underdone, but it will set up as they cool. Can place in the freezer to cool quicker.
While they are cooling, make the mint frosting. Melt white chocolate chips in the microwave. Add Greek yogurt, mint extract, and a few drops of green food coloring.
Once the bars have cooled, spread frosting over top and cut into 8 bars. Enjoy!
