Ingredients: Peppermint Chocolate Chip Mini Protein Muffin Recipe
- 1 scoop Ascent Vanilla Whey Protein Powder
- 1 scoop Ascent Vanilla Micellar Casein Protein Powder
- 2 tbsp. coconut flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup natural peanut butter
- 2 whole eggs
- 1/4 cup coconut oil (or butter), melted
- 1/4 cup Truvia baking blend
- 2 tbsp. mini chocolate chips
- 20 peppermint Hershey Kiss candies
Notes
*Truvia baking blend is a Stevia/sugar mixture. If you can’t find it, you can alternatively use 1/2 cup granulated sugar.
Instructions: Peppermint Chocolate Chip Mini Protein Muffin Recipe
- Preheat oven to 350F.
- Add all ingredients except for chocolate chips and peppermint Hershey’s to a food processor.
- Process until a thick batter forms and all ingredients are well incorporated.
- Add chocolate chips.
- Pulse until they are distributed evenly throughout the batter.
- Add the batter to a mini muffin pan filling 20 spots.
- Alternatively, roll into 20 balls to make cookies.
- Bake for a few minutes, take out of the oven, press a peppermint Hershey Kiss on top of each and finish baking for a few more minutes.
- Total bake time is 5-6 minutes, if you bake too long, they will dry out easily.
Once done baking, let cool and enjoy!
