Directions: Double Strawberry Protein Pop Tart 

  • Make the filling: 
    • Mash strawberries with a fork. 
    • Stir in protein powder, chia seeds, and maple syrup. 
    • Let set 5-10 minutes to thicken.
    • Note: you can also use low-sugar jam for a store bought version
  • Make the dough: 
    • Mix flour and protein powder together. 
    • Add yogurt and stir until a dough forms. 
    • Knead briefly until smooth. 
  • Assemble:
    • Roll dough into a rectangle and cut into 2 pieces. 
    • Spread filling on one piece (leave edges).
    • Wet edges with water. 
    • Place second piece on top and seal edges with a fork. 
    • Poke a few holes in the top. 
  • Cook: 
    • Air Fryer: 350°F for 4 minutes per side.
    • Oven: 375°F for ~10 minutes (flip halfway through).
  • Frost (optional):
    • Mix monk fruit powder, protein powder, and water until a glaze forms. 
    • Spread on top once pop tarts are cooled.
