Key Lime Pie Protein Bites
Ingredients: Key Lime Pie Protein Bites
- 1 cup raw cashews
- 1 cup soft pitted Medjool dates (about 10 large dates)*
- 1/2 cup finely shredded unsweetened coconut
- 1 scoop Ascent Key Lime Pie Whey Protein Powder
- Zest from 1 lime
- 1 tbsp fresh lime juice
- 1/3 cup finely shredded unsweetened coconut, for rolling
Directions: Key Lime Pie Protein Bites
- Put all ingredients except the extra 1/3 cup shredded coconut into a food processor and pulse until ingredients are well combined and sticky.
- Scoop out a tablespoon and roll into a ball then roll the ball in a bowl or on a plate of coconut shreds. Repeat.
- Place in an airtight container in the fridge for up to 1 week. Freeze for up to 3 months.
