Key Lime Pie Protein Bites

Ingredients: Key Lime Pie Protein Bites 

  • 1 cup raw cashews
  • 1 cup soft pitted Medjool dates (about 10 large dates)* 
  • 1/2 cup finely shredded unsweetened coconut
  • 1 scoop Ascent Key Lime Pie Whey Protein Powder
  • Zest from 1 lime
  • 1 tbsp fresh lime juice
  • 1/3 cup finely shredded unsweetened coconut, for rolling 

Directions: Key Lime Pie Protein Bites 

  • Put all ingredients except the extra 1/3 cup shredded coconut into a food processor and pulse until ingredients are well combined and sticky.
  • Scoop out a tablespoon and roll into a ball then roll the ball in a bowl or on a plate of coconut shreds. Repeat.
  • Place in an airtight container in the fridge for up to 1 week. Freeze for up to 3 months.
