High Protein Egg Bites

Ingredients: High Protein Egg Bites 

  • 5 eggs
  • 1/4 cup milk 
  • 1 cup flour 
  • 4 scoops Ascent Unflavored Whey Protein 
  • 2 tsp basking powder
  • 2 tsp kosher salt
  • 1 cup cottage cheese
  • 2-1/2 cups spinach, steamed
  • 1 cup sharp white cheddar cheese, shredded 

Directions: High Protein Egg Bites 

  • Set a rack in the middle of the oven and preheat to 400°F. Spray a 12 cup muffin win with baking spray. 
  • In a large bowl, whisk together the eggs, milk, flour, Ascent Unflavored Whey Protein, baking powder, and salt. Fold in the cottage cheese and spinach. 
  • Divide evenly between cups of the muffin tin. Top with additional shredded cheese and bake for about 20 minutes until centers are set and the cheese is golden and bubbling.
