Pumpkin Spice Iced Coffee Overnight Oats

Ingredients: Pumpkin Spice Iced Coffee Overnight Oats

  • 1 scoop Ascent Iced Coffee+ Protein Pumpkin Spice Whey
  • 1/2 cup Greek Yogurt
  • 1/2 cup almond milk
  • 1/4 cup pumpkin puree
  • 2 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice, optional
  • 1 cup rolled oats
  • 2 tsp chia seeds
  • 1 apple, finely diced
  • 2 tbsp almonds, toasted and chopped
  • 1/2 tsp flaky sea salt

Directions: Mint Chocolate Chip Protein Popsicles 

  • In a medium bowl, add the Pumpkin Spice Iced Coffee+ Protein, Greek yogurt, almond milk, pumpkin puree, maple syrup, vanilla extract, and pumpkin pie spice. Whisk to combine until smooth. Fold in the rolled oats and chia seeds to combine. 
  • Divide mixture between two 8 ounce jars. Set in the fridge overnight. Serve in the morning with whipped cream, diced apple, toasted almonds and sea salt (or any toppings of choice).
