Copycat Lemon Loaf

Dry Ingredients: Copycat Lemon Loaf 

  • 1 cup all purpose flour, spooned and leveled 
  • 3/4 cup all purpose whole wheat flour, spooned and leveled 
  • 2 tsp baking powder
  • 1/2 tsp table salt or fine sea salt
  • 2 scoops Ascent Lemon Sorbet Whey Protein Powder

Wet Ingredients: Copycat Lemon Loaf 

  • 2/3 cup plain Green yogurt - use 2% fat
  • 2 large eggs, room temperature 
  • 2/3 cup honey
  • 1/3 cup avocado oil, or any neutral oil
  • 1/3 cup fresh lemon juice 
  • 1 tbsp vanilla extract 
  • Zest of one lemon

Optional Glaze: Copycat Lemon Loaf 

  • 1/2 cup powdered sugar, spooned and leveled 
  • 3-4 tsp fresh lemon juice 

Directions: Copycat Lemon Loaf 

  • Preheat the oven to 350°F. Line a loaf pan with parchment paper. 
  • In one bowl, whisk together all dry ingredients. 
  • In another bowl, whisk together all wet ingredients until smooth. 
  • Add dry ingredients to wet and gently mix until just combined (don't overmix). 
  • Pour batter into the pan and smooth the top. 
  • Bake 40-50 minutes, until a toothpick comes out mostly clean. 
  • Cool in the pan for 15 minutes, then transfer to a wire rack and cool completely. 
  • For the glaze, mix powdered sugar and lemon juice until smooth. Pour over cooled loaf, let set, then slice and enjoy!
